April 4th is International Carrot Day

Carrots are one of the few vegetables mainly harvested for their roots rather than their shoots. They are joined by potatoes, beets, radishes, and turnips. The traditional color of carrots is a deep orange with yellow undertones, but there are many different color variations harvested worldwide, including purple, red, and pale yellow. Today, they are celebrated with a Carrot Day.
